In the midst of Winter it's only fitting to enjoy the heartiest of dishes...
This duck ragout is a lovely wintery dish which pairs beautifully with the flavours and aromas boasted by our award-winning McDonald Series Merlot 2014. Described as – ‘Dense, rich, weighty and richly textured wine with a complex mix of berry, plum, spice, liquorice and leather flavours plus a subtle seasoning of dried herb characters. Firmly-structured red with a promising future’. 95 points, MW Bob Campbell’s 2014 Hawke’s Bay Vintage Collection.
The addition of liquorice powder in the ragout and the delicate herb flavours on the duck bring a deeper level of flavour to the dish and complements the notes of the wine perfectly. We use Lakrids fine liquorice powder which is available at specialty homeware and food-stores. Serve with a creamy potato mash, fresh pasta or make into a gourmet pie.
